Midnight Solera

Midnight solera is a bourbon barrel aged stout inspired by the solera method. The solera method is a fractional blending system where the oldest liquid is drawn from the bottom of the vessel and the space is then filled by a younger batch, creating a “waterfall” of aging.

We employed this blending method throughout our stout lineup this past year. As a result this blend has pieces of all the stouts we released in 2025 in it. It is composed of a small portion of #SELECT BBA, Wheat Stout, Streams, Moon Port, and Inky December 2025 and then was topped up with a particularly unctuous barrel of wheat stout that rested in a Willett Bourbon barrel for 35 months.

This is a uniquely complex and delectable blend of stout. One that took over 3 years to produce, and many months to blend. An extravagant treat inspired by a blending method that dates back to the 18th century.
